A Bite of Laney

I want to share a recipe with you that you have never heard of! That’s
because I made it up thirty or so years ago. I was always making up
different foods for my kids to get excited about. Some ended up being
really great while others, well forget about those… So, one day I took
ingredients that were readily available, keeping cost in mind I started to
create. Hoping it would become a favorite. I had to name it otherwise I wouldn’t
remember what I put in it to remake it. I called it “My Petunia.”
I took as many good-sized potatoes to feed my family and washed and dried them. Then because I wanted the skins to be sturdy I rubbed vegetable oil all over them. Once they were baked I cut them open length wise and allowed them to cool enough so that I could handle them without burning my fingers. I removed all the potato from the skin. While the spuds were baking, I opened a couple of cans of tuna fish which I mixed in grated onion, a little mustard, and the normal amount of mayonnaise to mix tuna. Then take the potato and energize with whatever you want to make them delicious. I always use grated onion, margarine, a little milk, pepper and one egg. Yes a raw egg. It holds everything together and is completely absorbed and cooked. Now combine the tuna with the potato. Refill the potato skins and reheat until very hot. Just before removing them from the oven crown with a slice of cheese. Return to oven to brown. It kind of glues itself to the edges which is exactly what you want to happen. A tossed salad or side vegetable of choice is all you need to make this a surprisingly delicious and nutritious low cost meal. Hope you try this one. It may not sound appealing to you at first but wait until you taste the first mouthful before you say anything negative about this one. What a surprising taste. Talk to you soon
